Thanksgiving
  Gingered Pumpkin-Pear
  Soup

        This low fat recipe highlights the flavors of fall.

Ingredients

1 Cup sweet onion, chopped
2 Teaspoons fresh ginger, grated
2 Tablespoons butter or margarine
3 Ripe, sweet pears, peeled, cored and sliced
2 15 ounce cans pumpkin, drained
3 Cups vegetable broth
Salt and pepper to taste

Process

In a large saucepan, cook onion and ginger in butter or margarine. Don't brown.

Stir in pears and cook 1 minute more.

Stir in pumpkin and vegetable broth. Heat to boiling. simmer 20 minutes

Cool slightly and pureé in food processor or blender.

Return to pot.

Serve piping hot.
