Salsa Recipes Portobello Mushroom & Sun-dried Tomato Salsa
his salsa is served tossed over pasta. It is an easy and elegant supper dish. This pasta dish could be a delicious first course or it could equally well be a main course.
Ingredients

Portobello mushroom
|

Tablespoons olive oil
|

Ripe tomatoes
|

Cup sun-dried tomatoes, in oil, diced

Cloves garlic, diced

Tablespoon chopped fresh basil

Cup toasted pine nuts

Teaspoons balsamic vinegar

Teaspoon salt

Teaspoon freshly ground pepper

Process
Brush the mushrooms with 1 tablespoon of the oil and grill until tender. Dice into ½ inch cubes and transfer to a mixing bowl. Heat another tablespoon of oil in a skillet and sauté the onion for 5 minutes over medium heat. Add to the mixing bowl. Cut the tomatoes in half and squeeze out and discard the seeds and juice. Chop and add to the bowl. Add
the remaining ingredients and combine.
