Salsa Recipes Spicy Tomato-Chipotle Salsa
his spicy salsa is served over meat such as a grilled steak. The cool temperature of the salsa contrasts with the warmth of the sizzling steak.

Cup plus 1 tablespoon olive oil

Onion, chopped

Pounds ripe tomatoes

Finely chopped garlic
|

Cup minced fresh cilantro

Chipotle chiles en adobo, chopped

Cup red wine vinegar

Process
Sauté onion in 1 tablespoon oil and sauté until
carmelized, about 10 minutes. In a blender, combine cooked onion, tomatoes, and garlic until finely chopped, not puréed. Add the cilantro and chiles and combine well.
Peel, seed and chop the remaining pound of tomatoes and fold in
together with the remaining ¼ cup of olive oil, vinegar, salt and sugar.
