Egyptian Red Snapper in Red Pepper-Mint Sauce

Ingredients

8 ounce red snapper fillets

Tablespoon olive oil

Large Spanish onion
|

Cloves garlic
|

Red pepper, charred, skinned and chopped
|

Cayenne pepper to taste
|

Mint leaves

Tablespoon dried thyme

Teaspoons lemon juice

Process

To make the sauce sauté onions in olive oil until golden.

Add garlic, red pepper and remaining ingredients and simmer for 10 minutes.

Pour sauce over snapper fillets and bake covered in a 350° oven for 18 minutes.

Serve over rice or couscous.
