    A Taste Of Iberia

Iberia is the ancient Roman name for Spain. The Iberian peninsula comprises the nations of Spain and Portugal and is separated from the rest of Europe by the Pyrennes Mountains. This isolation from the remainder of the continent led to a distinctive and wonderful cuisine, or rather cuisines, for there are many regional variations throughout the lands of Iberia.

        Surrounded by water on three sides, Spain and Portugal are renowned for their seafarers and fish and seafood. Few dishes evoke a land as much as paella does. An endless variable conconction, paella usually combines mussels, chicken, scallops, clams, chorizo (a Spanish sausage) and vegetables over saffroned rice.

        Another dish evocative of Iberia is flan, a custard dessert with a carmelized topping. A good flan reminds us that often simplicity is best.

Goat Cheese with Tarragon and Garlic Marinade · Individual cubes of fresh imported Spanish goat cheese, marinated in pure virgin olive oil, wine vinegar, fresh tarragon and garlic.

Herbed Mussels · Baby mussels served with a tangy herbed green dipping sauce.

   First Course

Gazpacho · A celebrated Spanish and Portuguese tomato-base cold vegetable soup.

   Second Course

Scallops with Lime and Crab · Fresh sea scallops and lump crab meat combine with the subtle flavors of lime, orange, brandy and ginger, and served on individual scallop shells.

   Main Course

Paella Méditerranée · A golden Spanish presentation of rice, chicken, clams, mussels, scallops, and chorizo, cooked in seafood juices, white wine, and saffron.


Flan · The traditional Iberian dessert. Individual light cream custards with a rich brown sugar and rum caramelized topping.
